Ingredients
  • 1 ripe but firm mango, diced
  • 3 ripe kiwi
  • 1 lime
  • 2 tablespoons olive oil
  • ¼ cup fresh cilantro, chopped
  • ¼ of small red onion, diced
  • 1 jalapeno pepper, finely diced
  • salt and pepper
Instructions
  1. Combine all the ingredients in a medium bowl and season with salt and pepper.
  2. This is a great salsa for fish and meat recipes. Super fresh!

Ingredients
  • 1 package Bgreen Food Black Rice - gluten free
  • 1 red bell pepper, thinly sliced
  • 1 cup julienne carrots
  • 1 cucumber, seeded then sliced thinly
  • ⅓ cup fresh cilantro, chopped
  • ½ cup fresh basil, chopped
  • ¼ of small red cabbage, thinly sliced
  • ½ cup cherry tomatoes, halved
  • DRESSING:
  • 1 tablespoon grated ginger
  • 2 tablespoons Tamari Soy Sauce - gluten free
  • 2 tablespoons Marukan Rice Vinegar Lite Dressing - gluten free
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • salt and pepper
Instructions
  1. Cook the noodles according to directions.
  2. Mix all the dressing ingredients in a medium bowl. Mix all the other ingredients on a large platter. Drizzle the dressing over. Serve

  • few heirloom tomatoes, sliced
  • ½ of English cucumber, peeled and sliced
  • ¼ of red onion, thinly sliced
  • fresh basil leaves kosher salt
  • black pepper
  • 3 tablespoons red wine vinegar
  • 5 tablespoons extra virgin olive oil
Instructions
  1. Arrange the vegetables on a platter. Garnish with fresh basil. Combine red wine vinegar, olive oil in a small bowl then season with salt and pepper. Drizzle dressing over the vegetables. Really good side dish.

  • 1 deep red grapefruit, peeled
  • 2 or 3 California Mandarins, peeled
  • 2 tablespoons pumpkin seeds, toasted

  1. Toss everything on a platter. Drizzle vinaigrette over. Really fresh and healthy. You can use any salad greens you have. Yum!

Ingredients
  • 4 medium zucchini
  • ⅓ cup pitted kalamata olives, chopped
  • 1 cup cherry tomatoes
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • salt and pepper
Instructions
  1. Preheat oven to 350 degrees F. Place tomatoes on a rimmed baking pan. Drizzle some olive oil and season with salt and pepper. Roast tomatoes about 15 to 25 mins. or until they look blistered. Set aside.
  2. Slice zucchini lengthwise with a vegetable peeler. Preheat a cast iron pan to medium high heat. Add olive oil and butter. Stir in the zucchini and olives, season with salt and pepper. Cook for 2 to 3 minutes. Top with the roasted tomatoes and fresh basil. Serve
