Gluten Free Avocado & Tomato Salad

Ingredients
  • 1 ripe avocado, sliced into ⅓ inch thick
  • 2 medium heirloom tomatoes, sliced into ⅓ inch thick
  • fresh basil leaves
  • 1 cup corn
  • 3 tablespoons Private Selection Balsamic Vinegar of Modena - gluten free
  • 1 tablespoon French's Dijon Mustard - gluten free
  • 1 garlic clove, minced
  • ½ cup olive oil
  • salt and pepper
Instructions
  1. In a small bowl, combine balsamic vinegar, mustard, minced garlic, olive oil and season with salt and pepper. Whisk and set aside.
  2. Blot dry the corn with paper towels.
  3. Heat a cast iron pan to medium high heat. Roast the corn for few minutes until start to brown.
  4. Stack the tomatoes and avocados on a plate. Top with corn and fresh basil. Drizzle vinaigrette over. Serve
