Gluten Free Bagels with Berries and Mascarpone

Ingredients
  • 2 Udi's Gluten Free Plain Bagels, cut in half
  • ½ vanilla bean
  • ¾ cup Mascarpone cheese - gluten free
  • ¼ cup Heavy Whipping cream
  • 1 tablespoon confectioners' sugar, plus more for dusting
  • 1½ cups berries, strawberries, blueberries, and raspberries
Instructions
  1. Lightly toast the bagels.
  2. Scrape the seeds from the vanilla bean into a small bowl, Add the confectioners' sugar, mascarpone cheese, and 2 tablespoons whipping cream. Beat together until smooth.
  3. Spread the mascarpone cheese over the (2) of the bagels. Top with the fruits, then replace the other halves of the bagels on top. Sift a little confectioners' sugar over the top. Serve
