Ingredients
  • 2 packages Gluten Free - Quinoa Wheat Free Linguine
  • 1¼ cups Gluten Free - Annie's Naturals Tuscany Italian Dressing
  • 1 pound skinless chicken breast, thinly sliced
  • 8 oz white mushrooms, sliced
  • 5 garlic cloves, minced
  • 2 tablespoons olive oil
  • fresh flat parsley, chopped
  • 10 sun dries tomatoes, chopped
  • salt and pepper
  • parmesan cheese
Instructions
  1. Cook the noodles according to package directions and drain.
  2. Lightly season chicken with salt and pepper.
  3. On a large pan, heat oil and add garlic and cook for a minute.
  4. Add chicken; cook for 3 minutes or until chicken turned opaque. Drizzle chicken with 1 cup of the Italian dressing. Stir in the mushrooms and tomatoes.
  5. Cover the skillet and simmer until mushrooms are softened.
  6. Add spinach, cook for a couple minutes or until wilted. Season with salt and pepper according to taste.
  7. Toss cooked linguine and remaining ¼ cup of the Italian seasoning.
  8. Sprinkle with parsley and parmesan. Serve
