Ingredients
  • 1 pound boneless, skinless chicken breast
  • pepperjack cheese
  • corn tortillas (Guerrero are Gluten Free)
  • gluten free pico de gallo (recipe follows)
  • sour cream
  • salt and pepper
  • PICO DE GALLO
  • 4 cups of diced tomatoes (ripe but firm)
  • 1 jalapeno pepper, seeded and chopped
  • 3-4 sprigs cilantro, chopped
  • 1 lime juice
  • pinch of salt
Instructions
  1. Season chicken with salt and pepper.
  2. Grill chicken and cut into strips.
  3. On a large pan, heat tortillas on low.
  4. Add chicken and cheese. Cook until the cheese melts.
  5. Fold tortilla in half then flip to cook the other side.
  6. Serve with pico de gallo and sour cream.
  7. PICO DE GALLO
  8. Put diced tomatoes in a colander, and place it on top of a bowl. Let it sit for few minutes until all the juice are drained.
  9. Put the drained tomatoes in a medium bowl and mix all the other ingredients lightly. You can use all the lime juice if you want. Adjust according to your taste. Season with salt.
