Ingredients
  • 1 pound boneless, skinless chicken breast
  • pepperjack cheese
  • Guerrero Corn Tortilla - gluten free
  • gluten free pico de gallo (recipe follows)
  • sour cream
  • salt and pepper
  • PICO DE GALLO
  • 4 cups of diced tomatoes (ripe but firm)
  • 1 jalapeno pepper, seeded and chopped
  • 3-4 sprigs cilantro, chopped
  • 1 lime juice
  • pinch of salt
Instructions
  1. Preheat grill to medium high heat.
  2. Season chicken with salt and pepper.
  3. Grill chicken about 4 to 5 minutes per side. Transfer to a chopping board and cut into strips.
  4. On a large pan, heat tortillas on low.
  5. Add chicken and cheese. Cook until the cheese melts about 1 to 2 minutes.
  6. Fold tortilla in half then flip to cook the other side.
  7. Serve with pico de gallo and sour cream.
  8. PICO DE GALLO
  9. Put diced tomatoes in a colander, and place it on top of a bowl. Let it sit for few minutes until all the juice are drained.
  10. Put the drained tomatoes in a medium bowl and mix all the other ingredients lightly. You can use all the lime juice if you want. Adjust according to your taste. Season with salt.
