Gluten Free Citrus Chicken

Ingredients
  • 4 chicken breast, filleted to make 8 pieces
  • 3 garlic gloves, minced
  • 1 lemon, juiced
  • salt and pepper
  • ⅓ cup cilantro, chopped
  • olive oil
  • 1 navel orange, peeled and sliced in thin rounds
  • ¼ of red onion, thinly sliced
  • canola oil
  • micro greens
  • 2 tablespoons San J Tamari Soy Sauce - gluten free
  • 1 teaspoon sesame oil
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger
Instructions
  1. Drizzle some olive oil over chicken and season with salt, pepper, garlic, cilantro and squeeze some lemon juice. Cover and marinate for 15 minutes.
  2. In a small bowl, combine soy sauce, sesame oil, sugar, ginger, juice of ½ lemon and season with salt and pepper.
  3. Preheat a cast iron pan to medium high heat. Add 2 tablespoons canola oil. Cook the chicken about 3 minutes per side. Place chicken on a platter and top with slices of oranges, micro greens, red onions and drizzle some ginger dressing. Serve
