Gluten Free Classic Lemon Bars

Ingredients
  • 1 cup (2 sticks) butter, softened
  • 2¼ cups Bob's Red Mill All Purpose Flour - gluten free
  • 2 cups granulated sugar
  • 2 teaspoons lemon zest
  • 4 eggs
  • ½ cup fresh lemon juice
  • Domino Confectioners Sugar - gluten free
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine 2 cups flour, butter and ½ cup sugar. Mix nicely then press into bottom of 13x9 inch baking pan. Do not grease the pan.
  3. Bake for 20 minutes or until center is set and lightly brown.
  4. In another large bowl, combine remaining 1½ cups sugar, ¼ cup flour, eggs, lemon zest and lemon juice. Whisk until well combined.
  5. Bake for 22 to 24 minutes until center is set. Cool for about 1 hour. Sprinkle powdered sugar. Cut bars into equal parts. Serve
