Gluten Free Cloud Eggs Recipe

Ingredients
  • 4 large eggs
  • ¼ cup Applegate Uncured Sliced Ham, finely diced - gluten free
  • ½ cup grated parmesan
  • 2 tablespoon fresh chives, chopped
  • salt and pepper
  • butter
Instructions
  1. Preheat oven to 450 degrees F.
  2. Line a rimmed baking sheet with parchment paper and butter the parchment paper.
  3. Crack and separate the eggs. Egg white into a large bowl and individually place the egg yolks in small bowls making sure they are intact.
  4. Lightly season the egg whites with salt and pepper then beat until stiff peaks form using an electric hand mixer. Gently add the cheese, ham and half of the chives. Gently scoop ¼ of the mixture onto the baking sheet creating a mound and make an indentation for the egg yolks later. Bake for 3 minutes then gently place the egg yolks in the middle. Return to the oven and bake for another 3 minutes. Transfer to a plate and top with more chives. Serve
Notes
Just season lightly because the ham and cheese are already salty.
