Ingredients
  • 3 eggs lightly beaten
  • 3 slices cooked ham (HoneyBaked Ham, Dietz and Watson are gluten free)
  • olive oil
  • 2 green onions, sliced
  • 1 red bell pepper, diced
  • 1 medium diced tomatoes
  • spinach
  • sliced mushrooms
  • cheese shredded or sliced (your choice)
  • salt and pepper
Instructions
  1. Heat a nonstick pan over medium heat and add 1 tablespoon olive oil. Saute all the vegetables and mushrooms together. Season with salt and pepper.
  2. Coat the bottom of a large, lightly greased skillet with 3 eggs (beaten) and cook over medium-high heat until firm.
  3. Top with some of the other ingredients.
  4. Fold egg in half over fillings and cook few more minutes. Serve
