Ingredients
  • 6 eggs beaten
  • 1 ounce grated parmesan
  • pinch salt
  • 1 teaspoon butter
  • pinch black pepper
  • ½ cup roasted asparagus, chopped
  • ½ cup crispy Gluten Free Hempler's Bacon, 1 inch size
  • 1 tablespoon chopped parsley
Instructions
  1. Preheat oven to 450 degrees f.
  2. On a baking sheet, arrange asparagus, drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven for few minutes.
  3. In another skillet, cook bacon until crispy, set aside on a paper towel to drain fat.
  4. In a medium size bowl, blend together eggs, parmesan and season lightly with salt and pepper.
  5. Heat 12 inch non stick, oven safe sauté pan over medium high heat.
  6. Add butter and melt. Add chopped asparagus and crispy bacon, stir for 1 minute.
  7. Pour egg mixture into pan and stir.
  8. Cook for 4 to 5 minutes or until egg mixture has set on the bottom and begins to set on top. Sprinkle with parsley.
  9. Place pan in the oven and broil 3 to 4 minutes, until lightly brown.
  10. Serve
Notes
You can also substitute bacon with ham if you like.
