Gluten Free Grilled Tuna with Fennel and Onions

Ingredients
  • 4 6-ounces ahi tuna - yellowfin tuna fillets
  • 3 fennel bulbs, trimmed and cut into wedges
  • 1 onion, sliced into ¼ inch thick rings
  • 3 tablespoons chopped parsley
  • ½ cup kalamata olives, pitted
  • ½ cup caper berries, drained
  • juice of 1½ lemon
  • olive oil
  • 2 garlic cloves, chopped
  • salt and pepper
Instructions
  1. Preheat oven to 400 degrees f.
  2. Preheat a grill pan (cast iron) to medium high heat. Add a little bit of olive oil.
  3. Drizzle olive oil over fennel bulbs. Grill fennel and onions until marks appear.
  4. Place in a baking dish. Add the caper berries, parsley, lemon juice, garlic and olives. Toss well to combine. Roast for 20 minutes, or until the vegetables are tender. Remove from the oven and drizzle a little bit of olive oil and season with salt and pepper.
  5. Drizzle olive oil over fish fillets and season with salt and pepper.
  6. Preheat a grill pan (cast iron) over high heat until very hot. Grill the fish 2 to 3 minutes each side depending on thickness, cook until the outside is seared but rear in the middle.
  7. Spoon fennel mixture to the center of a plate and top with the fish. Garnish with chopped parley.
