Ingredients
  • 2 pork tenderloin - about 1 pound each
  • 1 lemon juice
  • 1 lemon zest
  • 5 garlic clove, minced
  • 3 tablespoons fresh rosemary, minced
  • 2 tablespoons fresh thyme, minced
  • kosher salt
  • black pepper
  • ¼ cup extra virgin olive oil plus 3 more tablespoons
Instructions
  1. Combine all the ingredients for the marinade except the 3 tablespoons olive oil in a large Ziploc bag. Season the pork with salt and pepper. Add the tenderloin in the bag and mix nicely to coat. Let it marinate in the fridge over night.
  2. Preheat oven to 400 degreed F.
  3. Preheat an oven safe skillet to medium high heat. Add 3 tablespoons olive oil. Sear the pork on all sides about 10 minutes. Transfer the skillet to the oven and roast it for 10 to 15 minutes. Slice and serve.
