Ingredients
  • 1 can 13 oz Jovial Organic Chickpeas (garbanzo beans), drained - gluten free
  • 1 English cucumber, diced
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 1 cup cherry or grape tomatoes, halved
  • ⅓ cupMezzetta Pitted Kalamata Olives - gluten free
  • ⅓ cup Kroger Manzanilla Olives Pimento Stuffed - gluten free
  • ⅓ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 1 garlic clove, minced
  • ½ lemon, juiced
  • 1 tablespoon French's Dijon Mustard - gluten free
  • salt and pepper
Instructions
  1. In a small bowl, combine olive oil, lemon juice, parsley, mustard, garlic and season with salt and pepper.
  2. In a large bowl, combine the garbanzo beans, cucumber, olives, red onion, and tomatoes. Toss with the dressing. Serve
