Gluten Free Oatmeal Raisin Cookies

Serves: 2 dozen cookies
Ingredients
  • 1½ cups Sun-Maid Raisins (this is Gluten Free)
  • 2 cups Bob's Red Mill Old Fashioned Rolled Oats (Gluten Free)
  • 1½ cups Orgran Gluten Free All Purpose Flour
  • 2 sticks butter, at room temperature
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon McCormick Vanilla - gluten free
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon Clabber baking powder - gluten free
  • 1 teaspoon McCormick ground cinnamon - gluten free
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the butter and the sugars. Beat with an electric mixer until creamy. Add eggs and vanilla and beat until mixed.
  4. In another bowl, sift together flour, baking soda, salt and cinnamon. Add it to the butter, then add oats and raisins. Mix together.
  5. With an ice cream scoop, scoop batter onto the prepared baking sheet. Slightly press the middle to flattened. Leave plenty of room for the cookies to spread.
  6. Bake 10 to 12 minutes. Remove cookies from the oven. Let it cool for few minutes.
  7. Serve
