Gluten Free Pan-Seared Cod with Tomato Basil Sauce

Ingredients
  • 1½ pound cod fillets
  • olive oil
  • pinch of McCormick red pepper flakes - gluten free
  • 1½ cups grape tomatoes, sliced in half
  • ¼ cup dry white wine
  • ½ teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon McCormick Paprika - gluten free
  • 2 cloves garlic, minced
  • ½ cup fresh basil, chopped
  • salt and black pepper
Instructions
  1. Pat dry the fish fillets with paper towels. Drizzle some olive oil and season with paprika, salt and pepper.
  2. Heat a non stick pan to medium heat then add a splash of olive oil. Sear the fish about 5 minutes and flip to cook the other side until done. Remove the fish from the pan. Add more olive oil and the pepper flakes and garlic. Saute until fragrant then add the tomatoes and cook until they starts to blister. Add the white wine and let it simmer quickly then add the basil, lemon juice and zest. Season with salt and black pepper. Return the fish to the pan and cook for 2 more minutes. Serve
