Gluten Free Pan-Seared Scallops with Orzo Pilaf

Ingredients
  • 1 cup Delallo Gluten Free Pasta Orzo
  • 1½ pounds sea scallops
  • 1 large red bell pepper, diced
  • ½ cup frozen corn
  • ½ cup frozen green peas
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons lemon juice
  • McCormick Garlic Salt - gluten free
  • olive oil
  • 2 tablespoons butter
  • salt and pepper
Instructions
  1. Cook the orzo according to package directions and set aside.
  2. Pat dry the scallops with paper towels and season with garlic salt and black pepper.
  3. Heat cast iron pan to medium heat then add a splash of olive oil and 1 tablespoon butter. Sear the scallops about 2 minutes per side and set aside.
  4. On the same pan add the remaining butter and saute the bell peppers, corn and green peas. Season with salt and pepper. Add the orzo, parsley and lemon juice. Stir nicely. Serve with the scallops. Yum!
