Ingredients
  • 1 cup Bob's Red Mill Quinoa - gluten free
  • 2 cups water
  • ¼ cup olive oil
  • ¼ cup Bragg Apple Cider Vinegar - gluten free
  • 1 teaspoon sugar
  • 1 lemon zest
  • 3 tablespoons lemon juice
  • 1 cup fresh strawberries, quartered
  • 1 cup blueberries
  • 1 ripe mango, diced
  • 3 tablespoons toasted pine nuts
  • 2 tablespoons fresh mint, chopped
Instructions
  1. Bring 2 cups of water to a boil then add the quinoa. Cover and cook for 12 minutes until done.
  2. Whisk together the olive oil, lemon zest, lemon juice, vinegar, and sugar.
  3. Transfer the cooked quinoa in a large bowl. Add the fruits then the dressing. Toss lightly then garnish with chopped mint. Serve
