Gluten Free Romaine Wedge Salad

Ingredients
  • 2 or 3 romaine lettuce
  • 1 medium tomato, diced
  • 2 tablespoons fresh chives, chopped
  • ⅓ cup cashew nuts, toasted and chopped
  • ¼ of small red onion, diced
  • Litehouse Lite Ranch Dressing - gluten free
Instructions
  1. Cut the lettuce into 4 sections lengthwise. Arrange them on a large platter.
  2. In a small bowl, combine diced tomato, red onion and chives. Top lettuce with the tomato mixture then the nuts and more chives. Drizzle dressing over the salad. Serve
