Gluten Free Stuffed Mushrooms

Ingredients
  • baby bella mushrooms or white mushrooms
  • mild cheddar cheese, shredded
  • pico de gallo (ingredients follows)
  • 1 or 2 medium ripe but firm tomatoes, diced, in a colander to drain juice
  • ½ jalapeno pepper, seeded and chopped
  • 2 cloves garlic, minced
  • ½ of lime juice
  • 2 tablespoon fresh cilantro, chopped
  • pinch of salt
Instructions
  1. Preheat oven to 375 degrees f.
  2. Clean mushrooms and remove stem.
  3. prepare pico de gallo (mix all ingredients in a medium bowl and season it with salt)
  4. Spoon cheese into mushrooms and top with pico de gallo.
  5. Bake 20 to 25 minutes.
  6. Serve
