Gluten Free Texas Style Chicken Nachos

Ingredients
  • 2 pounds chicken tenderloins
  • 1½ teaspoon McCormick Paprika - gluten free
  • ¾ teaspoon McCormick Chili Powder - gluten free
  • ¾ teaspoon McCormick Cumin - gluten free
  • ½ teaspoon McCormick Cayenne Pepper - gluten free
  • 1 teaspoon kosher salt
  • olive oil
  • 8 slices Applegate Bacon - gluten free
  • 1 jalapeno, sliced
  • 2 green onions, sliced
  • 1½ cups shredded cheddar cheese
Instructions
  1. Preheat oven to 425 degrees F.
  2. Cook bacon until crispy then cut into small pieces and set aside.
  3. Combine salt, paprika, cumin chili powder, cayenne pepper in a small bowl. Pat dry the chicken then rub the seasoning all over the chicken tenders.
  4. Heat a cast iron pan or oven proof pan to medium high heat. Add a splash of olive oil then cook the tenders for about 6 to 7 minutes or until done. Sprinkle cheese, green onions, bacon and jalapeno pepper slices over chicken.
  5. Bake until the cheese has melted about 2 minutes. Serve
