Slow Cooker Gluten Free Pork Stew

Ingredients
  • 1 bone-in pork shoulder or pork sirloin roast (3 to 4 pounds)
  • 1 pound fingerling potatoes
  • 3 carrots, cut into 2 inch chunks
  • 5 garlic cloves, smashed
  • 3 stalks celery, cut into 2 inch chunks
  • 1 2-inch ginger, peeled and grated
  • ⅓ cup Orgran All Purpose Flour Gluten Free
  • 4 bay leaves
  • 2 cups water
  • 1½ teaspoon dried thyme
  • 1 teaspoon McCormick ground allspice - gluten free
  • 2 14-ounce can Hunts Diced Tomatoes - this is Gluten Free
  • Kosher salt and ground black pepper
Instructions
  1. Combine the carrots, celery, garlic, ginger, and potatoes in a slow cooker. Add half of the flour and season with salt and pepper. Add the bay leaves over the vegetables.
  2. Season the pork generously with salt and pepper, sprinkle with allspice and thyme and add the remaining flour to coat. Place the pork over the vegetables. Add the tomatoes and 2 cups water. Cover and cook on low for 8 hours.
  3. Discard the bay leaves. Serve
