Spaghetti with Beef and Tomato Sauce G-Free

Ingredients
  • 1 package Barilla Spaghetti - Gluten Free
  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 (28-ounce) can Hunts Diced Tomatoes - gluten free
  • ⅔ cup Swanson Vegetable Stock - gluten free
  • 2 tablespoons Hunts Tomato Paste - gluten free
  • 2 teaspoons finely chopped fresh rosemary
  • 1 teaspoon dried oregano
  • fresh basil leaves
  • salt and pepper
  • parmesan cheese for garnish (optional)
Instructions
  1. Heat oil in a large saucepan. Add the onion, garlic, carrots and celery. Cover and cook on low for 5 minutes. Stir in the tomatoes, stock, red bell pepper, tomato paste, oregano and rosemary. Cover and simmer for 20 minutes.
  2. Brown the beef in another pan then drain. Set aside. Meanwhile cook the spaghetti according to package directions.
  3. Add the beef with the sauce mixture and season with salt and pepper. Let simmer for 2 more minutes.
  4. Divide the spaghetti among 4 plates. Spoon the sauce over the pasta and garnish with fresh basil and parmesan cheese. Serve
