Gluten Free Skillet Sausage and Potatoes

Ingredients
  • 2 packages aidells Italian Style sausages - gluten free
  • 1 medium onion, sliced into chunks
  • 1 red bell pepper, sliced into bite pieces
  • 1 green bell pepper, sliced into bites pieces
  • 1 large russet potato, cut into 1 inch cubes
  • 3 tablespoons butter
  • olive oil
  • salt and pepper
Instructions
  1. Parboil the potatoes in the microwave for about 6 minutes. Do not overcook then drain and set aside.
  2. Brown the sausages on a nonstick pan about 8 minutes then set aside. On the same pan add butter and some olive oil. Saute onions until translucent about 5 minutes. Add the potatoes and bell peppers. Season with salt and pepper. Cook until vegetables are done. Return the sausages into the pan and stir to incorporate. Heat for few minutes. Serve

Gluten Free Shirataki Noodle Soup (yam noodles)

Ingredients
  • 4 packages of Shirataki Noodles (also called yam noodles) gluten free
  • 2 chicken breast, skinless and boneless
  • bok choy
  • snap peas
  • ½ of medium onion, thinly sliced
  • 1 inch fresh ginger, thinly sliced
  • salt and pepper
  • 1 teaspoon sesame oil
  • 2 hard boiled eggs
  • 8 cups of water
Instructions
  1. In a large deep pot, combine the water, chicken, onion and ginger. Lightly season with salt and pepper. Bring to a boil then simmer on low for 45 minutes stirring occasionally. Take the chicken out to a cutting board and slice them into bite pieces. Return chicken to the pot.
  2. Add the noodles, sesame oil and the vegetables, simmer for 3 minutes. Serve with hard boiled egg.

Gluten Free Zesty Skillet Pork Chops

Ingredients
  • 4 to 6 Pork Chops
  • 1 teaspoon McCormick Chili Powder - gluten free
  • ⅓ teaspoon McCormick Cayenne Pepper - gluten free
  • ½ teaspoon McCormick Garlic Powder - gluten free
  • zest of 1 lime
  • 1 lime juice
  • salt and pepper
  • olive oil
  • 1 cup pineapple, diced
  • 3 tablespoon fresh cilantro, chopped
  • 1 jalapeno pepper, minced
  • ½ of a small red onion, finely chopped
Instructions
  1. Rub pork chops with chili powder, cayenne pepper, garlic powder then salt and a little black pepper.
  2. Combine the pineapple, cilantro, red onion, lime zest and juice in a medium bowl. Season with salt and pepper then drizzle a little bit of olive oil.
  3. Heat 1 tablespoon of olive oil on a large cast iron skillet to medium high heat. Add pork about 3 to 4 minutes per side.
  4. Place pork on a serving platter and top with the salsa. Serve

  • 6 lamb chops
  • splash of olive oil
  • kosher salt
  • ¼ to ½ teaspoon McCormick Cayenne Pepper - gluten free
  • 3 garlic cloves, minced
  • 3 tablespoons fresh rosemary, minced
  • 3 tablespoons fresh thyme, minced
Instructions
  1. Drizzle lamb chops with olive oil. Season with salt, pepper, garlic, rosemary and thyme. Place the chops in a large resealable plastic bag. Refrigerate for at least 3 hours.
  2. Preheat grill on medium high heat. Grill the chops about 3 to 5 minutes each side or until internal temperature reaches 145 degrees F.
  3. Serve with roasted vegetables.

Ingredients
  • 2 Cornish Game Hens, patted dry
  • 4 garlic cloves, minced
  • 3 tablespoons fresh cilantro, chopped
  • 1 lime zest
  • 1 teaspoon McCormick Ground Cumin - gluten free
  • ½ teaspoon McCormick Cayenne Pepper - gluten free
  • ¼ teaspoon salt
  • 3 tablespoon melted butter
  • black pepper
  • RICE PILAF:
  • 2 cups Royal Blend RiceSelect Rice Blend - gluten free
  • 1 garlic clove, minced
  • 1 cup carrots, chopped
  • 1 small onion, chopped
  • 2 tablespoons butter
  • black pepper
Instructions
  1. Preheat oven to 450 degrees F.
  2. In a small bowl, combine cumin, cayenne pepper, lime zest, cilantro, garlic and salt and pepper. Slide your fingers under the skin of the hens to loosen. Spread herb mixture inside and under the skin of the hens. Brush the skin with melted butter and lightly season with salt and pepper. Tie the hens' legs with kitchen twine. Place hens in a roasting pan.
  3. Roast hens until golden and cooked through about 35 to 45 minutes or until temperature reaches 175 degrees F. After roasting remove the hens out of the oven and let stand for 10 minutes.
  4. Cook the rice according to package directions.
  5. In a large saucepan, sauté garlic, onion and carrots together with butter. Stir in the cooked rice and cook for another 2 minutes. Lightly season with pepper.
  6. Place cooked rice on a serving platter. Put the hens on top and garnish with lime wedges and cilantro. Enjoy!
