Ingredients
  • 1 cup frozen corn
  • ½ cup pitted Kalamata Olives, roughly chopped
  • 1 large red bell pepper
  • 1 ripe avocado, diced
  • 1 jalapeno pepper, chopped
  • 1 clove garlic, minced
  • 1 lemon, juiced
  • 2 tablespoons Bragg Apple Cider Vinegar - gluten free
  • 2 tablespoons fresh oregano, minced
  • ¼ cup olive oil
  • 1 small sweet onion, diced
  • salt and pepper
  • Garden of Eatin' Corn Tortillas - gluten free
Instructions
  1. Cook the corn according to package directions. Drain and let it cool for few minutes.
  2. In a large bowl, combine, red pepper, onion, jalapeno, oregano, olives, and corn. Drizzle the olive oil, add the oregano, lemon juice, vinegar, garlic and season with salt and pepper. Toss to combine all the ingredients. Serve with tortilla chips. Really good for a snack.

  • rainbow carrots, peeled
  • assorted radishes, washed
  • cherry tomatoes
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup sour cream
  • 4 tablespoons Hidden Valley Dips Mix The Original Ranch - gluten free
  • 2 tablespoons Riega Gluten Free Onion Soup & Dip Mix
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, minced
Instructions
  1. Combine the sour cream, Hidden Valley Dips Mix, Onion soup mix, parsley and rosemary in a medium bowl.
  2. Arrange vegetables on a platter and serve with the dip. Yum!

  • 1 can 13 oz Jovial Organic Chickpeas (garbanzo beans), drained - gluten free
  • 1 English cucumber, diced
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 1 cup cherry or grape tomatoes, halved
  • ⅓ cupMezzetta Pitted Kalamata Olives - gluten free
  • ⅓ cup Kroger Manzanilla Olives Pimento Stuffed - gluten free
  • ⅓ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 1 garlic clove, minced
  • ½ lemon, juiced
  • 1 tablespoon French's Dijon Mustard - gluten free
  • salt and pepper
Instructions
  1. In a small bowl, combine olive oil, lemon juice, parsley, mustard, garlic and season with salt and pepper.
  2. In a large bowl, combine the garbanzo beans, cucumber, olives, red onion, and tomatoes. Toss with the dressing. Serve

Ingredients
  • 3 blood oranges
  • 2 navel oranges
  • 3 cara cara oranges
  • 3 tangerines
  • ½ bulb fennel, thinly sliced
  • 1 ripe avocado, pitted, peeled and sliced
  • ¼ of small red onion, thinly sliced
  • 2 tablespoons Bragg Apple Cider Vinegar - gluten free
  • ⅓ cup olive oil
  • 1 tablespoon raw honey - naturally gluten free
  • fennel fronds
  • ¼ cup mint leaves
  • salt and pepper
Instructions
  1. Slice off the skin of the oranges then slice them into rounds or disc. Arrange them on a serving platter or bowl.
  2. Whisk together the olive oil, cider vinegar, honey and season with salt and pepper.
  3. Top oranges with the fennel, red onions, fennel fronds, avocado and drizzle dressing over. Serve

Ingredients
  • DRESSING
  • ¼ cup Private Selection Balsamic Vinegar of Modena - gluten free
  • 2 teaspoons French's Dijon Mustard - gluten free
  • ½ cup olive oil
  • 2 teaspoons raw honey - naturally gluten free
  • 2 green onions, thinly sliced
  • salt and pepper
  • SALAD
  • 1 head romaine lettuce, sliced
  • 2 cups baby arugula
  • 2 ears corn, grilled
  • 1 small red onion, sliced into thin rounds or disc
  • 2 chicken breast, boneless and skinless, filleted
  • 2 cloves minced garlic
  • 1 tablespoon minced oregano
  • 1 cup English cucumber, thinly sliced
  • 1 ripe avocado, diced
  • 1 cup cherry or grape tomatoes, halves
  • olive oil
Instructions
  1. Heat grill to medium high heat.
  2. Drizzle chicken with olive oil, season with salt, pepper, minced garlic, and oregano.
  3. In a medium bowl whisk together the dressing ingredients and set aside.
  4. Grill the chicken about 3 to 4 minutes per side. Slice into bite pieces when it's cool enough to handle.
  5. Drizzle corn and red onions with olive oil then grill until slightly charred about 5 minutes. Strip the kernels from the corn cobs.
  6. Mix arugula and romaine lettuce on a platter. Drizzle some dressing. Top with grilled chicken, corn, avocado, tomatoes, cucumber, grilled onions and drizzle some dressing over the salad. Serve
