Ingredients
  • 1 can 13 oz Jovial Organic Chickpeas (garbanzo beans), drained - gluten free
  • 1 English cucumber, diced
  • 1 red bell pepper, diced
  • ½ small red onion, diced
  • 1 cup cherry or grape tomatoes, halved
  • ⅓ cupMezzetta Pitted Kalamata Olives - gluten free
  • ⅓ cup Kroger Manzanilla Olives Pimento Stuffed - gluten free
  • ⅓ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 1 garlic clove, minced
  • ½ lemon, juiced
  • 1 tablespoon French's Dijon Mustard - gluten free
  • salt and pepper
Instructions
  1. In a small bowl, combine olive oil, lemon juice, parsley, mustard, garlic and season with salt and pepper.
  2. In a large bowl, combine the garbanzo beans, cucumber, olives, red onion, and tomatoes. Toss with the dressing. Serve

Gluten Free Citrus Salad with Ginger Dressing

Ingredients
  • 2 blood oranges
  • 2 navel oranges
  • 2 tangerines
  • ½ lime juice
  • micro greens
  • 2 tablespoons San J Tamari soy sauce - gluten free
  • 2 tablespoons Marukan Lite Dressing - gluten free
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • salt and black pepper
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon olive oil
  • ¼ cup dried cranberries
  • small slice of red onion, for garnish
Instructions
  1. Carefully slice the skin of the oranges then slice into thin round pieces. Place on a platter.
  2. Combine soy sauce, lime juice, sesame oil, olive oil, dressing, sugar, ginger in a small bowl. Season with salt and pepper if desired. Spoon dressing over the oranges. Top with micro greens, cranberries and slices of red onions. Serve

  • 2 large sweet potatoes
  • ¼ cup Raw Organic Honey - gluten free
  • 1 teaspoon McCormick Ground Cinnamon - gluten free
  • olive oil
  • salt and pepper
Instructions
  1. Preheat oven to 375 degrees F.
  2. Peel and cut the potatoes into 1 inch cubes. Lay sweet potatoes in a single layer on a baking pan. Drizzle olive oil and honey. Sprinkle cinnamon and season with salt and pepper.
  3. Roast for 30 minutes until tender. Serve

  • 1 package Bgreen Food Black Rice - gluten free
  • 1 red bell pepper, thinly sliced
  • 1 cup julienne carrots
  • 1 cucumber, seeded then sliced thinly
  • ⅓ cup fresh cilantro, chopped
  • ½ cup fresh basil, chopped
  • ¼ of small red cabbage, thinly sliced
  • ½ cup cherry tomatoes, halved
  • DRESSING:
  • 1 tablespoon grated ginger
  • 2 tablespoons Tamari Soy Sauce - gluten free
  • 2 tablespoons Marukan Rice Vinegar Lite Dressing - gluten free
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • salt and pepper
Instructions
  1. Cook the noodles according to directions.
  2. Mix all the dressing ingredients in a medium bowl. Mix all the other ingredients on a large platter. Drizzle the dressing over. Serve
