Ingredients
  • 1 to 2 pounds fish (halibut, salmon) sliced
  • 1 cup Ener-G Bread Crumbs (this is Gluten Free)
  • 2 tsp. salt
  • ½ tsp. McCormick garlic powder - gluten free
  • ¼ tsp. pepper
  • 1 egg, lightly beaten
  • 1 tbsp. water
Instructions
  1. Place bread crumbs, salt, garlic, and pepper in a Ziploc bag; shake thoroughly.
  2. In a small bowl, combine eggs and water.
  3. Dip fish pieces in egg wash.
  4. Shake fish pieces one at a time in the bag.
  5. Deep fry until golden.
  6. Serve

Gluten Free Fish Tacos with Fruit Salsa

Ingredients
  • 1 pound halibut or snapper fillets
  • 6 (7 inch) La Burrita Corn Tortillas - gluten free
  • 3 cups washed and torn romaine lettuce leaves
  • 1 small red onion, halved, thinly sliced
  • 2 tablespoon lemon juice
  • 1 teaspoon McCormick chili powder - gluten free
  • 1 teaspoon McCormick ground allspice - gluten free
  • 1 teaspoon olive oil
  • 1 teaspoon minced garlic
  • 1 to 2 teaspoons grated lemon peel
  • ½ teaspoon McCormick Gourmet Collection 100% Organic Ground Cloves gluten free
  • FRUIT SALSA
  • 1 small ripe papaya, peeled, seeded, and diced
  • 1 firm banana, diced
  • 2 green onions, minced
  • 3 tablespoons chopped fresh cilantro
  • ½ of a lime, juice
  • 1 jalapeno peppers, seeded, minced
  • salt and pepper to taste
Instructions
  1. Preheat grill, or if you have a cast iron pan (my preference) oil a little bit to prevent fish from sticking.
  2. Combine lemon juice, chili powder, allspice, olive oil, garlic, lemon peel, cloves and a little salt and pepper.
  3. Cut fish into small pieces, about 3 inches by 4 inches or bigger.
  4. Rub fish with spice mixture.
  5. Grill fish, covered for 5 minutes or until fish is opaque in the center, turn occasionally.
  6. Heat corn tortillas according to package.
  7. Remove from heat. Remove bones if necessary.
  8. Combine all fruit salsa ingredients in a medium bowl, season with salt and pepper.
  9. Top each tortilla with lettuce, red onions, fish and the fruit salsa.
  10. Enjoy!

Ingredients
  • 2 pounds salmon or any white fish, cut into serving pieces
  • 3 tablespoon olive oil
  • Lawry's Seasoning - gluten free
  • 1 ripe mango, diced
  • 1 juice of lime
  • ½ red onion, minced
  • ¼ cup chopped cilantro
  • 1 jalapeno pepper, minced
  • salt and pepper
Instructions
  1. Preheat oven to 350 degrees F.
  2. Season fish on all sides.
  3. Lightly grease a rimmed baking sheet.
  4. Bake fish on 350 degrees for 15 to 20 minutes depending on thickness.
  5. SALSA
  6. In a medium bowl, mix mango, cilantro, jalapeno pepper, lime juice, olive oil, red onion and season it with salt and pepper.
  7. Spoon salsa on top of fish and serve.

Ingredients
  • 2 pounds Manila Clams, washed
  • ½ cup dry white wine, Reisling, Chardonnays are gluten free
  • 1 tablespoon olive oil
  • ⅓ cup green onions, chopped
  • 4 cloves garlic, smashed
  • ¼ teaspoon McCormick Chili Flakes or hot red pepper flakes - gluten free
Instructions
  1. Heat pan to medium high-heat, put olive oil, garlic and chili flakes. Cook for 1 minute. Add wine, bring to boil over medium high-heat. Add clams and green onions then cover and steam for about 5 minutes or until the clams open. Discard clams that did not open.
  2. Serve hot.

Ingredients
  • 1 teaspoon kosher salt
  • 2 packages of Organic Ancient Quinoa Harvest Linguine - gluten free
  • 3 tablespoon unsalted butter
  • 2½ tablespoon olive oil
  • 2 shallots, minced
  • 1½ tablespoon garlic, minced
  • ¼ teaspoon black pepper
  • ⅓ cup freshly chopped parsley
  • ½ lemon zest
  • ¼ cup lemon juice
  • 1 pound shrimp, peeled and deveined
  • pinch McCormick red pepper flakes - gluten free
Instructions
  1. Cook pasta according to the package.
  2. In a large pan, melt butter and add olive oil over medium-low heat.
  3. Add shallots sauté until translucent then add garlic and cook for a minute.
  4. Add shrimps, salt and pepper cook until they turned pink, stir few times.
  5. Remove from heat, add lemon zest, lemon juice, and pepper flakes.
  6. Add the pasta and chopped parsley to the pan and toss to combine.
  7. Serve with lemon wedges with parmesan cheese on top.
  8. You can add more salt and pepper according to your taste.
