Ingredients
  • Topping:
  • 1½ cups gluten free flour mix
  • 2 teaspoons Clabber Girl Baking Powder - gf
  • 1 teaspoon Bob's Red Mill Xanthan Gum - gf
  • 1 teaspoon McCormick Pure Vanilla Extract - gf
  • 3 tablespoons sugar plus more for sprinkling
  • ¼ teaspoon Kosher salt
  • 1 stick butter, cold and cut into small pieces
  • ¾ cup buttermilk
  • vanilla ice cream for serving (optional)
  • Berry-Peach Filling:
  • 2 large ripe peaches, peeled, pitted and sliced
  • 2 cups blackberries
  • 2 cups raspberries
  • 3 tablespoons gluten free cornstarch
  • 1 teaspoon gluten free pure vanilla extract
  • ¾ cup sugar
  • juice and zest of ½ lemon
  • pinch of Kosher salt
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large cast iron pan, toss together the filling ingredients.
  3. In a large bowl, combine the flour, sugar, salt, xanthan gum and baking powder.
  4. Incorporate butter by hands until mixture clumps together.
  5. Add the vanilla and buttermilk and stir until just combined.
  6. Top the fruit mixture with the flour mixture and sprinkle extra sugar on top.
  7. Bake from 40 to 50 minutes or until biscuit mixture is cooked through and the fruit is bubbling.
  8. Serve with ice cream if desired. Yum! It's the best...
