2½ teaspoons Red Star Dry Active Yeast - gluten free
¼ teaspoon McCormick Cream of Tartar - gluten free
1 teaspoon Bragg Apple Cider Vinegar - gluten free
1 teaspoons Bob's Red Mill Xanthan Gum - gluten free
1 tablespoons sugar
2 teaspoons kosher salt
4 tablespoons organic unsalted butter, melted and at room temperature
1¾ cups milk, warm
2 tablespoons sunflower seeds
2 tablespoons pumpkin seeds
1 tablespoon sesame seeds
2 egg whites, at room temperature
olive for greasing
more seeds for sprinkling
Instructions
Cut a parchment paper into a 15 inches round. Sprinkle flour on the parchment paper and set aside.
Place your Dutch oven with the lid on in the oven and preheat to 450 degrees F. Once preheated, remove Dutch oven and place it on the stove.
Using a stand mixer, mix in the bowl the flour, yeast, cream of tartar, xanthan gum, salt and sugar with a wooden spatula. In another bowl mix the milk, egg whites, butter and vinegar. Slowly add the mixture to the dry mixture while on low speed. Increase speed to medium and mix for about 3 minutes. You can stop the mixer and scrape the side a couple of times. Fold in the seeds and mix. The dough will be very sticky and thick.
Grease your hands with olive oil and form the dough into round and place it at the center of the parchment paper. Sprinkle more seeds at the top of the dough. Place it in a large bowl, cover with plastic wrap and let it sit for 45 minutes in a warm place until it doubled in size.
Meanwhile, place your Dutch oven with the lid on in the oven and preheat to 450 degrees F. Once preheated, remove Dutch oven and place it on the stove.
Place the dough with the parchment paper inside. Cover and return to oven and bake from 30 to 35 minutes or until top is golden brown.
Let it cool before slicing. So delicious and moist.
