Wild Rice Chicken Soup

Serves: 4 servings
- 1 pound chicken tenders, cut into 1 inch pieces
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 red onion, chopped
- 6 garlic cloves, smashed
- 1 tablespoon grated fresh ginger
- 1 tablespoon sesame oil
- 2 tablespoons olive oil
- 1 cup wild rice mix
- ½ cup fresh parsley. chopped
- 5 cups water or more if you want more broth
- salt and pepper
- Season chicken with salt and pepper.
- Heat a large Dutch oven to medium heat. Add olive oil, onion and garlic. Saute for few minutes until soft.
- Add the chicken and stir fry until browned, about 5 minutes.
- Stir in the vegetables and cook for 2 minutes, Add the water, rice blend, sesame oil and season with salt and pepper.
- Bring to a quick boil then lower to simmer, about 15 minutes or until rice is cooked through. Stir in the parsley before serving. Yum!
