Delicious gluten apple pie

Ingredients
  • CRUST:
  • 2½ cups cup4cup gluten free flour or any gluten free flour mix with xanthan gum
  • 8 tablespoons butter, cut into small pieces
  • ½ cup Vegetable Shortening
  • 1 large egg
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 2 teaspoons apple cider vinegar
  • 6 tablespoons ice water
  • FILLING:
  • 6 Granny Smith apples, peeled and thinly sliced
  • ¼ cup gluten free flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ teaspoon salt
  • 2 tablespoons lemon juice
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • EGG WASH:
  • 1 egg
  • 1 tablespoon water
  • FOR SPRINKLING:
  • 2 tablespoons Turbinado sugar
Instructions
  1. CRUST
  2. Mix the crust ingredients in the bowl of a stand mixer. Mix until the dough come together.
  3. Shape the dough into a ball or log then cut in half.
  4. On parchment paper, shape the first dough into a disc (about 10 inches, you can make them larger later) and do the same with the second half of the dough. Stack them together placing another sheet of parchment on top. Place them on a large plate, trim the parchment papers into a round shape making sure they are about 2 inches bigger than the dough. Wrap with plastic and refrigerate for 45 minutes.
  5. FILLING
  6. In a bowl, mix the sugars, cinnamon, nutmeg, salt and flour.
  7. Place the sliced apples in a large bowl. Add the vanilla and lemon juice. Carefully mix by hand. Add the dry ingredients with the apples and mix gently until the apples are coated nicely.
  8. BAKING
  9. Preheat oven to 400 degrees F.
  10. Take out the pie crust from the fridge and place on a work space. Roll the first dough using a rolling pin into slightly larger disc, about 1-2 inches bigger than the pie pan. Roll out the second dough and do the same as the first one. Carefully place one of the crust at the bottom of the pie pan. (9 inch) Gently press the crust.
  11. Arrange the apple slices into the prepared pie pan making sure to drizzle the sauce over.
  12. You can use a fancy pie crust cutter if you have. Cover the pie with the second crust sealing nicely.
  13. Whisk the egg and water in a small bowl,
  14. Brush the top of the pie with the egg wash then sprinkle the turbinado sugar.
  15. Place a baking pan at the lowest portion of the oven to catch sauce incase it drips while baking.
  16. Place the pie at the center of the oven and bake for 20 minutes.
  17. Lower the temperature to 350 degrees F. and continue baking for 40 more minutes or until bubbly. Check halfway, if the edges are browning too fast. Cover with a foil loosely.
  18. Checking for doneness, if a thermometer reaches 195 degrees F. when inserted at the center and the crust is nicely browned, it's probably done.
  19. Let it cool before slicing.
  20. Serve!
