Gluten Free Baja Fish Tacos

- Guerrero Corn Tortillas Gluten Free
- vegetable oil for frying
- 1 pound skinless halibut fillet, cut into 2 inches by ½ inch
- ¼ red cabbage, thinly sliced
- juice of 1 lime, plus wedges for serving
- 1 cup Orgran all purpose plain flour - this is gluten free
- 2 tablespoons honey
- ½ cup Hellmann's mayonnaise - gluten free
- salt
- 1 teaspoon McCormick Chili Powder - gluten free
- freshly ground pepper
- 1 ripe avocado
- ½ cup Pace Chunky Salsa - gluten free
- ½ cup fresh cilantro, chopped
- Heat about 3 inches of vegetable oil in a medium pot over medium low heat until a deep fry thermometer register 375 degrees.
- In a medium bowl, combine cabbage, cilantro, lime juice, honey and mayonnaise. Season with salt.
- Warm tortillas according to package.
- In a shallow bowl, mix flour, chili powder, and salt and pepper to taste.
- Dredge the fish in the flour mixture. Fry in batches until golden about 2 to 3 minutes. Transfer with slotted spoon to a paper towel lined plate.
- Season with salt.
- Halve, pit and sliced the avocado.
- Fill the tortillas with fish, avocado, slaw and salsa.
- Serve with lime wedges.
