3 pounds pork shoulder or pork belly, cut into small pieces
1 tablespoon whole peppercorn
1 whole garlic, peeled and smashed
½ cup San J Tamari soy sauce - gluten free
5 tablespoon Heinz white vinegar - gluten free
6 bay leaves
salt to taste
Instructions
In a large bowl, combine pork, soy sauce, garlic, peppercorn, and bay leaves. Marinate for at least 1 hour in the fridge or for best result overnight.
Heat a large pot over medium high heat. Brown the pork for few minutes about 10 minutes. Add the water and vinegar. Stir to combine, cover and simmer for 1 hour to 1½ hours. Stirring few times to prevent the meat from sticking. Add salt according to taste.
Notes
You could also cook this in a pressure cooker for 18 minutes.
