1½ to 2 pounds wild caught fresh halibut, cut into serving sizes
3 tablespoons minced fresh oregano
4 garlic cloves, minced
⅓ cup olive oil
lemon juice
3 tablespoons melted butter plus 2 tablespoons
salt and pepper
Instructions
Season the fish with salt and pepper then the herbs and garlic. Drizzle the olive oil and melted butter all over fish. Squeeze a little lemon juice over fish. Cover and marinate for 15 minutes. Preheat a cast iron pan to medium high heat. Add the butter in the pan. When it starts to foam a little, sear the fish until lightly brown about 3 to 4 minutes per side. Serve with your favorite side dish. Yum!
