1 cup Bob's Red Mill Brown Rice Flour - gluten free
1 cup Bob's Red Mill White Rice Flour - gluten free
1 cup Bob's Red Mill Tapioca Flour - gluten free
1 teaspoon Bob's Red Mill Xanthan Gum - gluten free
½ teaspoon Clabber Girl Baking Powder - gluten free
½ teaspoon salt
2 tablespoons sugar
1 tablespoon olive oil
olives
1 tablespoon Red Star Dry Active Yeast - gluten free
1¼ cup warm water plus ½ cup warm water (in separate cups or bowl) 110 degrees F
Contadina Pizza Sauce - gluten free
fresh mozzarella cheese, thinly sliced
1 medium tomato, sliced
fresh basil
butter for greasing
Instructions
Preheat oven to 350 degrees F.
In a bowl, whisk together 1¼ cup warm water and yeast. Let it sit for 5 minutes. Add 1 tablespoon of sugar halfway.
In a large bowl, combine the flours, baking powder, salt and 1 tablespoon sugar. Make a well in the middle and pour the yeast mixture, stir using a wooden spoon. Then add the olive oil and ½ cup water. Stir until dough becomes smooth.
Grease a pizza baking pan with butter. Gently place the dough in the middle and spread by hand. You might need extra brown rice flour for dusting your hands to make it less sticky.
Bake for 25 to 30 minutes until edges become slightly browned. Spread pizza sauce and the toppings. Bake for 25 to 30 minutes. Serve
Notes
You can also add more cheese.
