Gluten Free BLT Pizza

Ingredients
  • DOUGH
  • 1 (bag 2.2 lbs.) Caputo FioreGlut Gluten Free Flour
  • 2 teaspoons Red Star Active Yeast - gluten free
  • 3¼ cup warm water
  • 1 teaspoon fine sea salt
  • 1¼ tablespoon olive oil
  • OTHER INGREDIENTS
  • Lighthouse Blue Cheese Dressing - gluten free
  • Applegate Bacon, cooked until crispy - gluten free
  • fresh mozzarella cheese, shredded
  • simple green salad mix
  • romaine lettuce, roughly chopped
  • grape or cherry tomatoes
  • black pepper
Instructions
  1. In an electric mixer bowl, combine 3¼ cup water, yeast, salt, flour and oil. Mix on low setting for about 5 minutes. In a large plastic container with lid oil the bottom and sides transfer the dough, cover and let it sit for about 1 hour or until doubled in size.
  2. Preheat oven to 450 degrees F.
  3. Punch the dough to remove air bubbles.
  4. On a work surface, sprinkle a little flour and roll the dough using a rolling pin into a 12 inch pizza. Transfer to a pizza pan, drizzle a little bit of olive oil and bake for about 15 to 20 minutes. Remove from the oven and top with mozzarella cheese and blue cheese dressing. Return to oven and bake until cheese looks melted and slightly brown about 5 minutes. Top with mix greens, lettuce, crispy bacon, more blue cheese and black pepper. Serve
Notes
Makes 4 (12 inch) pizzas.
Refrigerate dough if not using right away.
