Easy gluten free firecracker chicken

Ingredients
  • 2 pounds chicken tenderloin, cut into bite pieces
  • ¾ cup Original Franks Hot Sauce - gluten free
  • 3 tablespoons honey
  • 3 tablespoons butter, melted
  • ½ teaspoon pepper flakes
  • ½ cup Clabber Girl Cornstarch - gluten free
  • salt and pepper
  • 2 large eggs, beaten
  • vegetable oil for frying
  • 3 green onions, chopped
Instructions
  1. Heat enough oil in a wok or deep fryer until temperature reaches 360 degrees F.
  2. Season the chicken with salt and pepper. Sprinkle cornstarch over chicken, toss to coat.
  3. Crack eggs in a bowl and beat. Grab a bamboo skewer and pick up 1 piece of chicken (using the skewer) dip in the beaten eggs. Let excess drip off and slowly drop in hot oil. You might need another skewer to release the chicken easier. Continue the process, cooking in batches. Cook for few minutes until slightly brown and crispy.
  4. Transfer the chicken to an oven proof baking dish with paper towels. When you are done cooking, remove the paper towels.
  5. Preheat oven to 350 degrees F.
  6. In a bowl combine the hot sauce, honey, melted butter and pepper flakes. Pour the sauce over chicken and gently coat. Bake from 25 to 30 minutes. Garnish with green onions before serving. Yum!
