In a large Dutch oven, add a splash of olive oil and brown the beef about 3 minutes and set aside.
Add the onion, garlic and carrots. Cook stirring occasionally until tender about 3 minutes. Add the tomato paste and cook for another minute.
Return the beef then add the broth, thyme, bay leaves and parsley. Season with salt and pepper. Bring to a boil; reduce heat and cover to simmer for about 90 minutes or until beef is tender.
Dissolve the flour with a little water and add it into the pot followed by the 3 tablespoons butter. Stir in the peas and mix until slightly thickened. Serve with mash potatoes. Yum!
Notes
If you can find a Gluten Free Dark Stout Beer, you can use 1 cup beer and 1 cup beef broth.
