Ingredients

  • 1 and 1/2 cups sweet rice flour - GF
  • 1 (13.66 oz) can Thai Kitchen Coconut Milk - GF
  • 1 teaspoon McCormick Vanilla Extract - GF
  • 1 young coconut, shaved or 1 jar of macapuno
  • 1/4 cup granulated sugar
  • 3 tablespoons melted butter, plus more for greasing
  • 1 large egg, beaten
  • pinch of salt
  • 1 teaspoon Clabber Girl Baking Powder - GF
  • banana leaves (available at Asian supermarkets) or parchment paper

Instructions

Preheat oven to 350 degrees F.

Clean the banana leaves with a paper towel. Working with one piece of banana leaf at a time, hold banana leaf with tongs about 2 inches above medium-high flame of a gas burner, turning every 3 to 5 seconds, until soft and pliable, about 15 seconds.

Arrange the banana leaves on a large cast iron pan or cake pan. Grease the leaves with melted butter.

In a large bowl, mix together the flour, sugar, salt, and baking powder. Then add the egg, vanilla extract, melted butter, coconut meat and milk. Stir to incorporate the ingredients.

Bake from 55 minutes to 1 hour or until the edges turned slightly brown. Serve while warm.
