Gluten Free Berry-Peach Cobbler

Ingredients
- Topping:
- 1½ cups gluten free flour mix
- 2 teaspoons Clabber Girl Baking Powder - gf
- 1 teaspoon Bob's Red Mill Xanthan Gum - gf
- 1 teaspoon McCormick Pure Vanilla Extract - gf
- 3 tablespoons sugar plus more for sprinkling
- ¼ teaspoon Kosher salt
- 1 stick butter, cold and cut into small pieces
- ¾ cup buttermilk
- vanilla ice cream for serving (optional)
- Berry-Peach Filling:
- 2 large ripe peaches, peeled, pitted and sliced
- 2 cups blackberries
- 2 cups raspberries
- 3 tablespoons gluten free cornstarch
- 1 teaspoon gluten free pure vanilla extract
- ¾ cup sugar
- juice and zest of ½ lemon
- pinch of Kosher salt
Instructions
- Preheat oven to 350 degrees F.
- In a large cast iron pan, toss together the filling ingredients.
- In a large bowl, combine the flour, sugar, salt, xanthan gum and baking powder.
- Incorporate butter by hands until mixture clumps together.
- Add the vanilla and buttermilk and stir until just combined.
- Top the fruit mixture with the flour mixture and sprinkle extra sugar on top.
- Bake from 40 to 50 minutes or until biscuit mixture is cooked through and the fruit is bubbling.
- Serve with ice cream if desired. Yum! It's the best...
