Easy Gluten Free Chicken with Cream of Mushroom

Ingredients
  • 4 chicken breast, skinless and boneless
  • 2 boxes (12 oz) Pacific Cream of Mushroom Condensed Soup - gluten free
  • ½ cup milk
  • McCormick Paprika - gluten free
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme McCormick - gluten free
  • salt and pepper
  • olive oil
Instructions
  1. Drizzle olive oil over chicken. Season with salt, pepper, paprika, thyme and garlic. Heat a large pan and add some olive oil. Cook chicken about 3 to 4 minutes per side and set aside when done. On the same pan add the mushroom soup and milk. Season with salt and pepper. Let it boil a little bit then add the chicken back. Simmer for a couple of minutes. Serve

Ingredients
  • 2 cups uncooked Jasmine rice
  • ¼ cup Tamari Soy Sauce - gluten free
  • 1 cup frozen green peas
  • 1½ cups pineapple chunks
  • 1 cup diced carrots
  • 4 eggs, lightly beaten
  • 3 tablespoons butter
  • 2 tablespoon sesame seeds
  • olive oil
  • 1 onion, finely chopped
  • 5 garlic cloves, minced
Instructions
  1. Cook rice.
  2. Heat a non stick pan to low heat. Add some olive oil then the eggs. Cook the eggs like scramble and set aside. On the same pan add more olive oil and some butter. Saute onions until translucent then add carrots. Cook for few minutes then add sesame seeds. Season with salt and pepper then set aside.
  3. Heat wok to medium high heat then add 3 tablespoons butter and the garlic. Saute until fragrant about a minute then add rice. Do not stir the rice immediately, you can hear it sizzling. Stir nicely and cook for few minutes. Add the eggs, pineapple, and carrots mixture and the peas. Stir and add soy sauce. Cook for few more minutes and add more salt according to taste. You're done!

  • 4 to 6 Pork Chops
  • 1 teaspoon McCormick Chili Powder - gluten free
  • ⅓ teaspoon McCormick Cayenne Pepper - gluten free
  • ½ teaspoon McCormick Garlic Powder - gluten free
  • zest of 1 lime
  • 1 lime juice
  • salt and pepper
  • olive oil
  • 1 cup pineapple, diced
  • 3 tablespoon fresh cilantro, chopped
  • 1 jalapeno pepper, minced
  • ½ of a small red onion, finely chopped
Instructions
  1. Rub pork chops with chili powder, cayenne pepper, garlic powder then salt and a little black pepper.
  2. Combine the pineapple, cilantro, red onion, lime zest and juice in a medium bowl. Season with salt and pepper then drizzle a little bit of olive oil.
  3. Heat 1 tablespoon of olive oil on a large cast iron skillet to medium high heat. Add pork about 3 to 4 minutes per side.
  4. Place pork on a serving platter and top with the salsa. Serve

Ingredients
  • 6 chicken thighs with skin
  • 5 garlic cloves, minced
  • 4 tablespoons melted butter
  • 5 to 7 tablespoons fresh oregano, finely chopped plus more for garnish
  • 1 lime juice
  • 1 lime, cut into wedges
  • kosher salt
  • black pepper
Instructions
  1. Preheat oven to 400 degrees F.
  2. Mix the oregano, lime juice and garlic together. Season the chicken with salt and pepper. Rub the chicken with the oregano mixture. Grease a rimmed baking dish with butter. Arrange the chicken nicely onto the baking dish. Drizzle with melted butter. Bake 30 to 35 minutes until chicken looks crispy. Garnish with fresh oregano and lime wedges.

  • 2 pounds skinless chicken breast, cut into 1½ inch pieces
  • 1 red bell pepper, cut into 1½ inch pieces
  • 1 green pepper, cut into 1½ inch pieces
  • 1 cup pineapple chunks, cut into 1½ inch pieces
  • ½ cup Sweet Baby Rays Bbq Sauce - gluten free
  • 4 tablespoons frozen orange juice concentrate, thawed or fresh orange juice
Instructions
  1. Heat grill to medium high heat.
  2. Thread chicken, pineapple, peppers alternately onto skewers to make 8 to 10 kabobs.
  3. Mix bbq sauce and orange juice concentrate, brush sauce mixture onto kabobs. Grill for about 10 minutes or until chicken are done, turning and brushing with remaining sauce.
