Gluten Free Apple Pie

Ingredients
  • 6 to 7 Granny Smith Apples, peeled and thinly sliced
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 3 tablespoons flour
  • 1 tablespoon lemon juice
  • 1 teaspoon McCormick Ground Cinnamon - gluten free
  • ¼ teaspoon McCormick Ground Nutmeg - gluten free
  • ¼ teaspoon McCormick ground ginger - gluten free
  • 1 tablespoon butter, cut into small cubes
  • coarse sugar
  • 2 tablespoon whole milk
  • PIE CRUST:
  • 2 cups Bob's Red Mill 1 to 1 Baking Flour - gluten free
  • 1 stick organic butter, grated
  • 1 egg
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 7 tablespoons iced water or a little bit more
Instructions
  1. PIE CRUST:
  2. In a large bowl combine the flour, sugar and salt. Add the grated butter and incorporate by hand then add the egg. Slowly add iced water while mixing by hand. Gently knead for few minutes and form into a ball. Cover and refrigerate while preparing the filling.
  3. Cut the dough in half. Sprinkle flour on a large surface and roll the dough into thin sheet enough to cover a pie pan. Trim the edge with scissors. Do the same on the other half of the dough and set aside.
  4. FILLING:
  5. In a large bowl, combine the apples, sugars, lemon juice, spices and the 3 tablespoons flour. Carefully arrange the apple into the pie pan, top with cubed butter and carefully place the second pie crust trimming excess. Use a fork to press the edges to seal the pie. Brush the top of the pie with milk and sprinkle coarse sugar.
  6. Bake at 375 degrees for 40 to 45 minutes or until crust is golden brown and filling is bubbly. Cool for few minutes before serving. Yum!
