Gluten Free Chocolate Macaroons

Ingredients
  • ALMOND PASTE:
  • 1 cup Simple Truth Almond Meal/Flour (see other brand below) - gluten free
  • ½ cup Domino Confectioner's Sugar - gluten free
  • 1 egg white
  • ¼ teaspoon Cook's Pure Almond Extract or McCormick Almond Extract - gluten free
  • ⅛ teaspoon sea salt
  • OTHER INGREDIENTS:
  • 1 cup Nestle Semisweet Chocolate Chips - gluten free
  • 2 egg whites
  • ½ cup Domino Confectioner's Sugar - gluten free
  • 2 tablespoons Krusteaz All Purpose Flour - gluten free
Instructions
  1. Preheat oven to 300 degrees F.
  2. Line a cookie sheet with parchment paper.
  3. First, make the almond paste by combining all the ingredients in a bowl. Melt chocolate in a small saucepan over low heat, stirring constantly; set aside. Beat almond paste, ½ cup sugar, and egg whites with an electric mixer about 1 minute. Add the chocolate and beat until well combined. Add the flour and beat on low speed.
  4. Spoon mixture into pastry tube fitted with rosette tip. Pipe 1½ inch spirals and 1 inch apart onto the cookie sheet.
  5. Bake for 20 minutes or until set. Carefully transfer parchment paper on a wire rack and let it cool completely. Transfer cookies on a plate and sprinkle more powdered sugar if desired. Ready!
