Gluten Free Fresh Peach Cobbler

Ingredients
  • 10 fresh peaches, peeled and pitted and sliced
  • 2 cups Krusteaz All Purpose Flour - gluten free
  • 2 teaspoons McCormick Vanilla Extract - gluten free
  • 1 tablespoon Clabber Girl Baking Powder - gluten free
  • ¼ cup King Arthur Flour Super Finely Ground Almond Flour - gluten free
  • 2 cups granulated sugar
  • 1 cup blueberries
  • ½ teaspoon salt
  • 2 cups whole milk
  • ½ stick organic butter
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large cast iron pan, combine the peaches, 1 cup sugar, vanilla, and water. Cook until soft about 8 minutes. Stir occasionally and strain. Transfer to a bowl.
  3. In a large bowl, combine the flour, milk, baking powder salt and the remaining sugar. Do not over mix.
  4. On the same cast iron pan, melt butter then add the peaches and blueberries. Pour the batter on top then sprinkle the almond flour.
  5. Bake for 40 minutes or until browned. Serve with your favorite ice cream. Yum!
