Gluten Free Pecan-Crusted Salmon (Asian Style)

Delicious gluten free Asian style pecan-crusted salmon.

Ingredients
  • 4 salmon filets skin on
  • 1 tablespoon unsalted butter
  • ¼ cup raw honey
  • 2 tablespoons San-J Gluten Free Soy Sauce
  • 1 tablespoon brown sugar, packed
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic, minced
  • juice of 1 lemon
  • salt and pepper
  • 2 teaspoons Rumford Corn Starch - GF
  • PECAN CRUST
  • ¼ cup pecans, finely chopped
  • ¼ cup Ian's Panko Breadcrumbs -GF
  • ¼ cup fresh parsley leaves, finely chopped
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a medium bowl, mix the pecan crust ingredients and set aside.
  3. In small saucepan, combine the soy sauce, honey, brown sugar, garlic, ginger, cornstarch and lemon juice and heat over medium. Bring to a boil then reduce heat to simmer until slightly thickened, about 3 minutes. Set aside.
  4. Grease a baking pan with butter.
  5. Season salmon fillets with salt and pepper. Place the salmon skin down on the prepared pan and sprinkle nicely with the pecan mixture.
  6. Bake for about 10-12 minutes depending on thickness until fish flakes easily with a fork.
  7. Serve with lemon glaze. Yum!
