Gluten Free Yam Noodle Stir Fry with Edamame

Ingredients
  • 3 to 4 packages of Miracle Noodles, rinsed and drained - gluten free
  • 2 cuts of New York steaks, thinly sliced
  • ½ cup frozen edamame, thawed
  • 1 cup carrots matchsticks
  • ¼ cup Tamari Soy Sauce - gluten free
  • 2 tablespoons brown sugar
  • 1 tablespoon Clabber Girl Cornstarch - gluten free
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • ½ cup water
  • 1 tablespoon toasted sesame seeds
  • olive oil
  • fresh cilantro
  • lime wedges
  • salt and pepper
Instructions
  1. Preheat cast iron pan or non stick pan to medium heat.
  2. Season the beef with salt and pepper then sprinkle some cornstarch. Heat some olive oil then add the beef. Stir fry the beef for few minutes until browned. Transfer to a plate. Quickly clean the pan with paper towels. Place the edamame in a small microwavable bowl and add enough water. Microwave for 4 minutes then drained. Add more olive oil to the pan, garlic and the carrots. Stir fry for few minutes. Add the edamame and noodles to the pan. Stir fry for few minutes. Mix the soy sauce, ginger and sugar in a small bowl then add to the pan. Stir fry to incorporate. Garnish with sesame seeds. Serve with fresh cilantro and lime wedges.
