Gluten Free Beef Fajita Nachos

Ingredients
  • 1½ lb. ground beef or 2 to 3 good cut of steaks, thinly sliced
  • 1 packet McCormick Fajita Seasoning - gluten free
  • ¼ cup water
  • 1 tablespoon canola oil
  • 3 green onions, sliced
  • 1 can (2.25 oz) Pearls Sliced California Ripe Olives
  • 1 medium tomato, diced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Pace Chunky Salsa Mild - gluten free
  • 1 bag (11 oz.) Mission Organics White Corn Tortilla Chips - gluten free
Instructions
  1. Preheat broiler.
  2. Heat a cast iron skillet to medium low, add the oil and the beef. Brown the beef for few minutes. Combine the seasoning and water in a small bowl then add to the beef. Simmer for few minutes until thickened. Remove from the heat.
  3. Spread half of the chips on a 13 x 9 baking pan. Top with half of the beef then half of the cheese. Add another layer of chips, beef and end with cheese. Sprinkle the tomatoes, green onions and olives. Broil for 2 minutes or until the cheese has melted. Serve with the salsa. Enjoy!
