Gluten Free Clam Chowder

Ingredients
  • 1 can (10 oz) Crown Prince Natural Wild Caught Boiled Baby Clams - gluten free
  • 1 bottle (8 oz) Crown Prince Clam Juice - gluten free
  • 5 medium red-skinned potatoes, peeled and cut into ½ inch cubes
  • 3 to 4 slices Hempler's Bacon - gluten free; cut into 1 inch pieces
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 2 bay leaves
  • 2 stalks celery, thinly sliced
  • kosher salt
  • black pepper
  • 1 cup half and half
  • 2 tablespoons unsalted butter
  • 2 cups water
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons fresh parsley, chopped
Instructions
  1. Cook the bacon on a pan over medium heat until crispy; Set aside. Add the onion and garlic. Saute for 5 minutes. Add the celery, thyme and bay leaves. Cook for another 2 minutes. Set aside.
  2. Heat water and clam juice in a dutch oven over medium high heat. Add the potatoes and boil for 15 minutes on low. Remove ⅓ of the potatoes and set aside. Mash the potatoes in the dutch over using a potato masher until slightly smooth. Add the reserved potatoes, bacon and onion mixture and stir. Cover and cook on low for 5 minutes stirring a couple of times. Add the clams, butter and half and half. Season with salt and pepper. Remove the bay leaves. Serve with chives and parsley. Enjoy!
