Wild Rice Chicken Soup

Easy gluten free wild rice chicken soup.

Serves: 4 servings
Ingredients
  • 1 pound chicken tenders, cut into 1 inch pieces
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 red onion, chopped
  • 6 garlic cloves, smashed
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 1 cup wild rice mix
  • ½ cup fresh parsley. chopped
  • 5 cups water or more if you want more broth
  • salt and pepper
Instructions
  1. Season chicken with salt and pepper.
  2. Heat a large Dutch oven to medium heat. Add olive oil, onion and garlic. Saute for few minutes until soft.
  3. Add the chicken and stir fry until browned, about 5 minutes.
  4. Stir in the vegetables and cook for 2 minutes, Add the water, rice blend, sesame oil and season with salt and pepper.
  5. Bring to a quick boil then lower to simmer, about 15 minutes or until rice is cooked through. Stir in the parsley before serving. Yum!
