Easy gluten free tomato soup

Ingredients
  • 4 cans (14.5 oz) Hunts Diced Tomatoes - gluten free
  • 2 medium onions, diced
  • ¼ cup Cup4Cup Multipurpose Flour - gluten free
  • ⅔ cup Pacific Chicken Broth - gluten free
  • ½ tablespoon kosher salt
  • ⅓ cup Half & Half
  • 1 tablespoon raw honey - naturally gluten free
  • ⅛ cup sugar
  • 4 tablespoons butter
  • ½ teaspoon McCormick Celery Salt - gluten free
  • black pepper
  • fresh basil for garnish
Instructions
  1. Melt butter in a medium pot over medium to low heat then add the onions. Cook the onions until soft and translucent about 15 minutes.
  2. Add the flour and stir until slightly thickened about 3 minutes. Stir in the tomatoes, broth, salt, black pepper, sugar and celery salt.
  3. Bring to a slow boil then reduce heat to simmer. Simmer for 30 minutes stirring and scraping the bottom occasionally.
  4. Remove from heat and add the honey and half & half.
  5. Using a handheld blender, blend until almost smooth. Adjust salt according to taste. Serve and garnish with basil leaves. Super yummy!
