Gluten Free Oats and Apple Tart

Ingredients
- 1¼ cups Bob's Red Mill Old Fashioned Oats - gluten free
- ½ cup packed brown sugar, divided
- 1 tablespoon plus ¼ teaspoon ground cinnamon, divided
- 1 envelope Knox Original Gelatine Unflavored - gluten free
- 5 tablespoon melted butter
- 1 package (8 ounces) cream cheese, softened
- 2 medium sweet apples, unpeeled, cored and sliced thinly
- 1 teaspoon lemon juice
- ¼ cup water
- ½ cup apple juice concentrate
- ⅛ teaspoon nutmeg
Instructions
- Preheat oven to 350 degrees F. Combine oats, ¼ cup brown sugar and 1 tablespoon cinnamon in a medium bowl. Add the butter and stir. Lightly grease a 9 inch pie plate. Press the oat mixture onto bottom and sides of the pie plate. Bake for 7 minutes and let cool on a wire rack.
- In a small bowl, toss apples and lemon juice; set aside. Place water in a small saucepan. Add the getaline and stir. Add the apple juice and cook over medium heat until gelatin is dissolved. Do not boil. Remove from heat and set aside.
- In a medium bowl, beat cream cheese with an electric mixer at medium speed until smooth. Add the remaining ¼ cup teaspoon cinnamon and nutmeg. Mix until smooth. Slowly add the getaline on low speed until creamy about 1 minute.
- Arrange apples in crust. Pour the cream cheese mixture over the top. Refrigerate for 3 hours. Serve
