Gluten Free Oats and Apple Tart

Ingredients
  • 1¼ cups Bob's Red Mill Old Fashioned Oats - gluten free
  • ½ cup packed brown sugar, divided
  • 1 tablespoon plus ¼ teaspoon ground cinnamon, divided
  • 1 envelope Knox Original Gelatine Unflavored - gluten free
  • 5 tablespoon melted butter
  • 1 package (8 ounces) cream cheese, softened
  • 2 medium sweet apples, unpeeled, cored and sliced thinly
  • 1 teaspoon lemon juice
  • ¼ cup water
  • ½ cup apple juice concentrate
  • ⅛ teaspoon nutmeg
Instructions
  1. Preheat oven to 350 degrees F. Combine oats, ¼ cup brown sugar and 1 tablespoon cinnamon in a medium bowl. Add the butter and stir. Lightly grease a 9 inch pie plate. Press the oat mixture onto bottom and sides of the pie plate. Bake for 7 minutes and let cool on a wire rack.
  2. In a small bowl, toss apples and lemon juice; set aside. Place water in a small saucepan. Add the getaline and stir. Add the apple juice and cook over medium heat until gelatin is dissolved. Do not boil. Remove from heat and set aside.
  3. In a medium bowl, beat cream cheese with an electric mixer at medium speed until smooth. Add the remaining ¼ cup teaspoon cinnamon and nutmeg. Mix until smooth. Slowly add the getaline on low speed until creamy about 1 minute.
  4. Arrange apples in crust. Pour the cream cheese mixture over the top. Refrigerate for 3 hours. Serve
